Making your own vegan gyros is really easy and super tasty! 🤩
For 2 servings you need:
2 onions
1 clove of garlic
100 g soy shreds
200 ml boiling water
1 tsp vegetable broth
1 tbsp soy sauce
1-2 tsp “Meat & Gyros” seasoning or similar
1 tsp thyme
Season with pepper, salt and possibly Worcestershire sauce
3 tbsp oil for frying
We ate the gyros in a flatbread with a dip made from (soy) quark, red cabbage, kale, coleslaw, cucumber, tomato and pickled peppers. 😋
We decided on a simple yogurt dip with soy yogurt, cucumber cubes, lime juice, garlic, herb salt and pepper☺️ But of course you can vary it as you like (herbs, spices, base...)
Preparation:
1) Peel onions and cut into rings. Then press the garlic clove and set both aside.
2) In a pot/heat-proof bowl, combine the soy shreds, vegetable stock powder, soy sauce and boiling water, stir and let it steep for 10-15 minutes.
3) Meanwhile, prepare the dip/vegetables of your choice.
4) Drain/squeeze out excess liquid from the soy shreds and then season.
5) Heat about 3 tablespoons of oil in a pan, fry the soy shreds for a few minutes and then add the onion rings + garlic and continue frying until everything is brown. Season to taste and the gyros is ready! ☺️
